 Ok, to get things started here, we've got some drawings from a Czech publication on the He111 which show the major differences between all the military variants.  On the left are the A through E versions, and on the right are the F, J, and P (the first "glass nose" variant to enter service).

 To assist with dihedral and alignment questions, we have these two drawings of the B-2 variant; the basic alignment and shape remained the same through the E version.
